Yorkshire Puddin’
Ingredients
- At least 2 tbsp drippings from a prime rib roast
- 4 large eggs
- 2 cups milk
- 280g all-purpose flour
- 1 tsp salt
- Canola oil
Utensils
- 12-inch cast iron skillet
- Food processor or blender
Instructions
- Put the skillet in the oven and preheat to 400℉.
- In a blender, blend eggs, milk, flour, drippings, and salt until smooth.
- Add excess drippings to the skillet and coat all over the bottom and up the sides. If you don't have enough drippings, use the canola oil.
- Quickly pour the batter into the center of the hot skillet and let it spread evenly.
- Put the skillet back in the oven, being careful not to slosh.
- Bake for 30 minutes, or until the Yorkshire pudding is puffed and golden brown.

Cast Iron Skillet
Holds heat well, so it browns better than it looks like it should. Also the pizza pan, when the occasion calls for it.
