Prime Rib Roast

1-7 days in advance

  1. Pat dry and slice the fat into ~½” diamonds.
  2. Generously salt all over, continuing to pat dry.
  3. Wrap in a clean, lint-free towel or cheesecloth, and set in a quarter sheet.
  4. Put this back in the fridge for a few more days, or at least overnight.

Oh also, clean your oven! When we get to the searing step, we want as little that can catch on fire as possible.

Pre-cooking

  1. Set it out on the counter for about two to three hours, so that it can reach room temperature.
  2. Crumple foil into 8-10½” balls. Put these on the half sheet (it will function as our rack).
  3. Lightly oil the outside of the roast to help things stay together.
  4. Dice the garlic somewhat coarsely and distribute it throughout those fat diamonds and any other openings you can find.
  5. Season with pepper.
  6. Dampen the twine a little bit and then tie the roast.
  7. Set it on the balls on the half sheet.

Roasting

  1. Insert the temperature probe at a 45° angle and set it to alarm at 118℉.
  2. Put the roast in the oven and set to 225℉.
  3. Enjoy the smells and until the thermometer alarm goes off and then take it out.

Poast-Roast

  1. Let the roast reast for 45-60 minutes.
  2. Grab those drippings and make a nice Yorkshire Puddin’ in the meantime.
  3. Crank the oven up to 500-550℉ and put the roast back in (sans probe).
  4. Monitor for fire 🔥
  5. After about 10-15 minutes or when the crust is just right, turn off the oven and take the roast out.
  6. Let it cool enough to touch and then carve it up!
