Smash Grill Cheese (Patty Melt )
Ingredients
- 1 LB ground beef
- 8 slices bread
- 280g cheese
- Garlic powder
- Montreal steak seasoning
Utensils
- Cast iron skillet (10” or larger)
- Small cutting board
- Small knife
- Flat metal spatula
- A sturdy spoon
Instructions
- Cut the cheese into 8 equal slices. Set aside.
- Divide the beef into 8 equal balls.
- Heat the skillet to ~400°F.
- Smash two meat balls onto the skillet using the spoon for leverage. They will quickly brown.
- Season meat generously.
- When the edges are crisping up, scrape up and flip the half with the most pink still.
- Place two cheese slices on it, about in the shape and size of your bread.
- Put the other half on top of the cheese, with the unheated side still facing up.
- Once the cheese starts to melt and the meat is crisp, flip the whole thing.
- Put a small amount of butter on the empty side of the skillet, then put the bread on it.
- Once the meat-cheese has had equal time on this side, put it on the bread. Put the other slice of bread on top.
- Butter the other side of the skillet and flip the whole thing.
- Once the two sides are perfectly browned, cut the sandwich in half on the skillet and stand them up to brown the inside edge.
- Serve with chips and a pickle.

- [ ] Get grilled onions in there somehow. Or raw onions?
Cast Iron Skillet
Holds heat well, so it browns better than it looks like it should. Also the pizza pan, when the occasion calls for it.
