Pasta
Fresh egg pasta dough, mixed in the stand mixer. 100g flour + 1 egg per person — scale from there.
Ingredients
- 400g flour
- 4 eggs
- 4 pinches of salt
- Water, as needed
- More flour, for dusting
Utensils
- Stand mixer, with the dough hook
- Kitchen scale
- Pasta roller
- Pasta cutter
- Bench scraper
- ÂĽ metal steam pan
- Large pot
Instructions
- Put the flour, eggs, and salt in the mixer bowl with the dough hook.
- Mix on speed 1 until it starts to combine, then speed 2 until it reaches a crumbly stage.
- If it looks dry, add water a splash at a time until it pulls clear of the sides.
- Keep kneading on speed 2 until it comes together into a ball, then another minute. Never above speed 2.
- Turn it out onto a floured surface and knead by hand a couple of minutes, until smooth and elastic.
- Not elastic enough: back in the mixer on speed 2 for 30 seconds.
- Shape the dough into a rough rectangle. It won't stay one once it goes through the rollers, but it feeds better if it starts that way.
- Run it through the pasta roller at the widest setting a couple of times, until it goes through easily.
- Step the roller down one setting at a time, running the sheet through at least once at each, until it reaches the thickness you want.
- Dust with flour along the way, so the sheet doesn't stick to the rollers or to itself.
- Fettuccine: stop around setting 4.
- Spaghetti: go a little further, so the sheet is no thicker than the cutter's blades are wide.
- Cut the sheet with the bench scraper into lengths as long as you want the noodles.
- Flour the surface under the pasta cutter, so the noodles land on flour.
- Dust each length with flour, then run it through the cutter. The extra flour gives the freshly cut sides something to pick up, so the noodles don't stick together.
- Gather the noodles into a bundle and set it on a floured surface, or in the steam pan.
- Boil until tender, 2–4 minutes. Fresh pasta cooks fast.
Notes
- 100g flour + 1 egg per person is the whole recipe. One large egg is about 50g, so the dough runs roughly 2:1 flour to egg by weight.
- Salt is a pinch per person too.
- Add water sparingly, a splash at a time. It's easy to add and impossible to take out.
- The video starts with the paddle and switches to the hook once it's crumbly. The hook alone does the job with one less attachment to scrape and wash.
- The video wraps the dough and rests it in the fridge 20–30 minutes. Going straight from kneading to rolling works fine.
- For a big batch, roll and cut all the sheets first, then run them all through the cutter.
- A ÂĽ steam pan is just the right size to hold the noodles.

Used with the dough hook for bread and the paddle for cookie dough. The bowl doubles as a proving container.

Digital scale that reads grams. Weighing beats measuring for anything dry — flour especially, where a packed cup and a loose one differ by a lot.
