Pasta Sauce
Ingredients
- 1 28 OZ can of whole peeled tomatoes
- 1 yellow onion (~300g)
- 30g garlic
- TODO: Maybe even 35g?
- 30g olive oil
- TODO: Or more?
- 3 tsp Italian seasoning
- 1 tsp fennel seed
- 2 tsp kosher salt
- Pepper to taste
- TODO: Figure out what tastes good and fill this in.
Utensils
- ÂĽ metal steam pan
- 2 QT (or larger) saucepan
- Silicone spatula
Instructions
- Mince garlic and soak in the olive oil.
- Crush the fennel seed.
- Combine fennel seed, Italian seasoning, pepper, and salt in a small dish.
- Empty the can of tomatoes into the steam pan.
- Crush the tomatoes with your hands until they feel right.
- Heat garlic in the saucepan until it smells good.
- Bloom seasoning with the garlic for a minute.
- Pour the tomatoes in the saucepan and bring to a simmer.
- Dice & sauté onion.
- Add the onion to the saucepan.
- Add salt & pepper.
- Let simmer until it tastes great (at least 20 minutes).
- Add salt or other seasonings as desired.
- Serve over pasta or with mozzarella sticks or whatever!
Notes
- To make it a pizza sauce, use 3 OZ tomato paste and don’t simmer for long (or at all?).
