Flour tortillas
Ingredients
- 100g AP flour
- 2 tbsp salted butter
- 62g water
Utensils
- Metal bowl
- Tortilla press
- Griddle
- Tortilla box
Instructions
- Melt butter in the skillet and pour into the mixing bowl of flour.
- Mix in the water until it's about the consistency of Play-Doh and it stops sticking to the walls.
- Line tortilla press with parchment paper.
- Form dough balls of ~1.25” diameter (38g)
- Squish dem balls.
Be sure to place the ball a little offset, closer to the top surface hinge, since the action of closing it will cause it to move toward the lever side.
- Cook on a ~300-350°F surface until the edges just start to curl, then flip.
The first-cooked side will start to look kinda spotty with white spots, like so:
When the second side releases and it can move on the surface with just a small amount of force (e.g. a nudge from the spatula), it's done!
- Store in a tortilla box until ready to serve.
Flour : Water ratio
Like with the Bread recipe, it seems the flour:water ratio should be about 1.6:1.
Tortilla Press
Flattens masa balls between two sheets of plastic. A heavy pan and some patience will do it, but not as evenly.
